This baked pork chop recipe is one of my husband’s best! He makes it almost every fortnight; it’s easy and delicious yet so aromatic, juicy, and golden-baked! I love these moments when he politely kicks me out of the kitchen and puts the arpon on – happy hours!

This recipe is one of our go-to weekday meals – easy to prep, packed with flavour, and nourishing. And yes, it’s entirely gluten-free and lactose-free!

There’s something so warming about the humble spices of Eastern Europe – the kind of flavours that linger in the air long after the meal is finished. These Balkan-style oven-baked pork chops are my twist on the flavours I remember growing up with – hearty, spiced, and deeply satisfying. No breadcrumbs, dairy, or processed fuss – just good, honest food.

This version is flavoured with sweet paprika, bay leaves, and black pepper—spices commonly used in Balkan stews, braised meats, and even vegetable dishes.

But here, turmeric, a spice native to South Asia, is used. The result is beautifully golden pork that is gently aromatic and comforting in the most healthy, contributing way. Look at the Nutrition Information below.

**I always pair turmeric with a touch of black pepper. Why? Because black pepper contains piperine, which boosts curcumin absorption – the active compound in turmeric – making it up to 20 times more effective. It’s one of those tiny tweaks that really matters when cooking for wellness.

Healthy Oven Pork Chops – What You’ll Need

Ingredients:

Bone-in pork chops (about 2.5 cm thick): Pork is a good source of high-quality protein and rich in B vitamins like B1 (thiamine), B6, and B12. Choose free-range or organic to reduce additives and support animal welfare.

Rice bran oil (or olive oil): For richness and moisture.

Ground turmeric: A natural anti-inflammatory with earthy depth.

Black pepper: For heat and gut-stimulating effects, black peppercorns, crushed or ½ tsp ground pepper.

Sweet paprika: Adds colour, subtle sweetness, and warmth.

Bay leaves: Add a woody, slightly floral note.

Sea salt: Enhances the taste of the dish.

Optional: A dry white wine or a splash of apple cider vinegar for deglazing.

Equipment:

Roasting tray

Mixing bowl

Meat thermometer (optional)

Though pork isn’t as iconic in a wellness diet as fish or chicken, it absolutely has a place in a balanced, whole-food lifestyle, particularly when consumed in moderation and cooked simply.

Pork tenderloin and loin chops, in particular, are lean cuts high in protein, lower in saturated fat compared to beef, and rich in iron, zinc, selenium, and B-complex vitamins.

With just one oven-baked pork chop, you can take your daily recommendation of vitamin B12. Have a look of this comprehensive guide about B12 for the importance of it and how to obtain it, regardless of dietary restrictions or preferences.

What matters most is how it’s prepared: baked instead of fried, seasoned with spices and herbs instead of salt-heavy sauces, and served alongside vegetables, whole grains, and good fats – just like in this recipe.

This is where pork aligns beautifully with the principles of balanced eating, emphasizing freshness, seasonality, and minimal processing.

Step-by-Step: How to Bake the Juiciest Pork Bone-in Chops

1. Prep the chops:

Pat the pork dry with kitchen paper. This helps it sear better in the oven and stay juicy inside.

2. Marinate:

In a bowl, mix oil, turmeric, salt, and pepper. Rub this all over the pork chops. Let them marinate for at least 30 minutes, or cover and refrigerate overnight.

Preheat the oven:

to 200°C (fan 180°C) / 400°F. If your chops have been in the fridge, bring them to room temperature first.

Bake:

Place the roasting tray in the oven. Bake for 12–15 minutes, depending on the thickness, or until the internal temperature reaches 63°C / 145°F. Flip the chops halfway through the cooking process.

Rest:

Remove the chops from the oven and let them rest for 5 minutes, covered with foil. This step locks in the juices.

Serving Suggestions

Serve these gorgeous pork chops with:
Grilled veggies (aubergine, courgette, peppers)
A scoop of gluten-free buckwheat or quinoa salad
A drizzle of garlic-lemon dressing or tahini-yoghurt (use lactose-free)
Try roasted root veg and a warm lentil salad for a wintery twist.

Variations and Substitutions

If you don’t have turmeric or sweet paprika, just season with black pepper and salt; they also work beautifully.

For extra depth, swap lemon juice for a splash of dry white wine or a teaspoon of balsamic vinegar.

You can also substitute bone-in chops with boneless loin or tenderloin medallions, slightly reducing cooking time.

Make-Ahead Tips

You can marinate the pork overnight for a deeper flavour. Leftovers keep well in the fridge for 3 days and reheat beautifully in the oven, wrapped in foil, at 160°C. They also freeze well—slice them and store them in airtight containers for up to 2 months.

Expert Tips

Use a thermometer. This is my #1 tip when working with meat. Measure the thickest part to ensure an accurate temperature reading.
Sear the chops first. If you prefer, this step will help keep the juices in the meat. I don’t do this on this recipe, but if you try, please let me know in a comment below.
OR broil them after baking. Instead of searing the chops, turn on the broil setting for 2-4 minutes and flip the chops midway through.

Additionally, when the baking tray is removed from the oven, cover it with foil or a lid to prevent it from cooling too quickly. Again, this helps to retain moisture and keep the chops tender and juicy.

FAQs

Can’t find an answer? Get in touch →

Can I use boneless pork chops for this recipe?

Yes, but reduce the oven time by 2–3 minutes, as boneless cuts cook faster and dry out more easily.

What internal temperature should pork chops reach?

The USDA recommends 63°C (145°F) with a 3-minute rest. They’ll still be juicy and slightly pink inside – safe and delicious.

How do I stop pork chops from drying out?

Marinating, not overcooking, and allowing the meat to rest after baking are key. Bone-in chops also help retain more moisture.

Can I skip the searing step?

Yes, I usually skip this step. I just bake them directly—brushing them with oil and watching the timing closely to avoid drying out.

Is this recipe suitable for meal prep?

Well, I recommend adding them to your freezer meal prep. These pork chops can be marinated and frozen raw, making them the perfect option for a prep-ahead dinner. Just thaw overnight and bake—no chopping or mixing after work! In my opinion, when they are cold, they can become a bit chewy, so I avoid meal prep with them. Just enjoy them hot.
