100 g gluten-free dark chocolate chips – I’ve found that choosing good-quality chocolate makes a huge difference, especially when you’re following a gluten-free lifestyle. For this recipe, I use refined-sugar-free dark chocolate chips from Nibbles Simply. They are gluten-free certified and free from barley malt and unnecessary additives. That matters to me. When you’re gluten-free and trying your best with ultra-processed ingredients, trust in food is everything.
It means I can enjoy these bonbons without second-guessing myself. Always check labels carefully, as some chocolates may contain barley malt or be at risk of cross-contamination.
Pistachio Filling
100 g puffed quinoa (gluten-free) – Make sure your quinoa is labelled gluten-free. It adds light crunch, fibre, and plant protein without making the filling heavy.
100 g pistachio butter (100% pistachios) – Choose 100% pistachio butter with no added sugar, oils, or fillers. This gives the best flavour and keeps the filling naturally nourishing.
40 g maple syrup – Maple syrup provides gentle, natural sweetness and works well with the rich chocolate and pistachio flavours. You can adjust the amount slightly to suit your taste.
About 30 ml of water – Or use some homemade almond milk. For me, the homemade is the best choice; you can use any plant milk you like.
How to Make Gluten-Free Dubai Chocolate at Home
Step 1
Start by mixing the coconut cream and matcha until smooth. Lightly brush or flick this into your silicone moulds and place them in the fridge for five to ten minutes. This creates the delicate green pattern you see on luxury chocolates. This step is optional; you don’t really need this pattern, but I truly like it.
Step 2
Next, gently melt the dark chocolate. Using a small brush or teaspoon, coat each mould well, making sure the sides are covered. This forms the shell. Place it back in the fridge for five minutes to set.
Step 3
While that firms up, prepare the filling. In a bowl, mix the puffed quinoa, pistachio butter, maple syrup, and water. You’re looking for a soft, cohesive texture — something that holds together but isn’t sticky or runny.
Step 4
Spoon the filling into each chocolate shell and press gently. Return to the fridge for another five minutes.
Step 5
Finally, cover the filling with the remaining melted chocolate, smooth the tops, and refrigerate for at least two hours — ideally overnight.
Once fully set, gently pop the bonbons out of the moulds.

- Step 2 – Make the Chocolate Shell – Melt the dark chocolate gently using a bain-marie or microwave in short bursts. Using a small brush or teaspoon, coat each mould cavity, making sure the sides are well covered. Refrigerate for 5 minutes.
- Step 3 – Prepare the Filling – In a bowl, combine the puffed quinoa, pistachio butter, maple syrup, and water. Mix until soft, cohesive, and slightly sticky.
- Step 4 – Fill the Moulds – Spoon the pistachio mixture into each chocolate shell. Press gently to remove air pockets. Chill for 5 minutes.
- Step 5 – Seal with Chocolate – Cover the filling with the remaining melted chocolate. Smooth the tops and return to the fridge for at least 2 hours, preferably overnight.
- Step 6 – Unmould – Once fully set, carefully pop the bonbons out of the moulds and enjoy.
