Did you know that your favourite cookie from supermarket has the highest number of cosmetic additives? I didn't know either.

While working on my dissertation about ultra-processed foods, I noticed that cookies and biscuits often contain some of the highest numbers of cosmetic additives in packaged foods, and in addition many gluten-free products rely on refined starches that provide little protein or fibre.

That observation encouraged me to keep experimenting with ingredients that felt more aligned with my approach to baking.

When I started developing gluten-free chocolate chip cookies for the blog, I experimented with several nutrient-dense ingredient combinations like oat flour, almond flour and flaxseed. The first batches were nutritious, but the texture and flavour were not quite right yet.

After a few more adjustments, these cookies finally delivered what I was looking for — a chewy, irresistible cookie made with simple ingredients.

The result is these high-fibre gluten-free chocolate chip cookies — simple, balanced and genuinely delicious.
