Keep the cucumber water; it’s excellent for electrolyte drinks!

Do I need to peel or deseed the cucumber?

It’s optional! English or Persian cucumbers don’t need to be peeled. However, scooping out the watery seeds with a spoon and discarding them before grating can save you time on cleanup. In this recipe, I prefer to peel the cucumber.

How do I stop it from getting watery?

After grating the cucumber, sprinkle it with a small pinch of salt. Let it sit for 10–20 minutes, then wrap it in a clean tea towel, cheesecloth, or paper towels and wring out as much moisture as possible over the sink

What is the best yogurt for tzatziki?

Always use full-fat, plain Greek yogurt or strained homemade yogurt. “Greek-style” yogurt is often thickened with starches instead of being naturally strained, which changes the authentic texture.

What if my yogurt is too runny?

If your yogurt is a bit soft, place it in a cheesecloth-lined sieve over a bowl and let it strain in the fridge for a few hours (or overnight) to drain excess whey.

How long does it last in the fridge?

Notes

  • Yogurt Selection: Traditional recipes rely on strained Greek yogurt for a rich texture. If your yogurt is on the runny side, you can line a fine sieve with cheesecloth and let it strain in the fridge for an hour. 
  • Cucumber: Leaving the skin on provides a nice color and texture, but feel free to peel it if you prefer. 
  • Garlic: Fresh garlic can be quite sharp. Finely grating it (ideally into a paste) helps distribute the flavor evenly without biting into raw chunks. 
  • Make-Ahead: Tzatziki tastes best the next day, making it the perfect make-ahead condiment. You can store it in an airtight container in the fridge for up to 3-4 days.
