Heat oil in a pan. Sauté the mince and spices, cook until browned.
Remove the meat from the pan and set it aside.
In the same pan, drizzle some oil and add blended tomatoes and garlic.
Simmer 30 mins.
Add the mince 10 minutes before the tomato sauce is done.
Slice zucchinis, salt, rest 15-20 mins. Pat dry. Dust with rice flour.
Layer sauce, zucchini slices, and cheese in a baking dish.
Top with parmesan. Bake at 190°C for 45 mins.
Rest 15 mins before serving.
