These No-Bake Pistachio Walnut Energy Balls are rich, naturally sweetened snacks made with Medjool dates, walnuts, pistachios, and smooth pistachio butter, then coated in refined sugar-free dark chocolate.   • Add the Medjool dates, walnuts and pistachio kernels to a food processor. Pulse it a few times, until crumbly.
  • Add the pistachio butter and process until the mixture is sticky and fully combined, scraping down the sides as needed.
  • Scoop out portions and roll into 18 evenly sized balls using your hands.
  • Melt the dark chocolate using a double boiler on low heat.
  • Dip each energy ball into the melted chocolate, allowing excess to drip off.
  • Place on baking paper and let set at room temperature or in the fridge until firm.

Notes

  • If your dates are dry, soak them in warm water for 5–10 minutes and drain well before blending.
  • For easier rolling, lightly dampen your hands or chill the mixture for 10 minutes.
  • Chocolate's thickness will affect the final calorie count.
  • Store in an airtight container in the refrigerator for up to 10 days.
  • Freeze for up to 2 months. Allow to sit at room temperature for a few minutes before serving.
