These No-Bake Pistachio Walnut Energy Balls are rich, naturally sweetened snacks made with Medjool dates, walnuts, pistachios, and smooth pistachio butter, then coated in refined sugar-free dark chocolate. Add the Medjool dates, walnuts and pistachio kernels to a food processor. Pulse it a few times, until crumbly.
Add the pistachio butter and process until the mixture is sticky and fully combined, scraping down the sides as needed.
Scoop out portions and roll into 18 evenly sized balls using your hands.
Melt the dark chocolate using a double boiler on low heat.
Dip each energy ball into the melted chocolate, allowing excess to drip off.
Place on baking paper and let set at room temperature or in the fridge until firm.
If your dates are dry, soak them in warm water for 5–10 minutes and drain well before blending.
For easier rolling, lightly dampen your hands or chill the mixture for 10 minutes.
Chocolate's thickness will affect the final calorie count.
Store in an airtight container in the refrigerator for up to 10 days .
