These easy no-bake pistachio chocolate bars are made with pistachios, dates, coconut, peanut butter, cocoa powder, and dark chocolate. Gluten-free, dairy-free, and naturally sweetened.

Blend pistachios, dates and coconut in a food processor.
Transfer the mixture to a bowl and add the peanut butter, cocoa powder and water. Mix well.
Divide into 12 portions. Press into parchment-lined moulds.
Melt chocolate with coconut oil over a double boiler.
Pour over bars, top with extra chopped pistachios.
Chill for 1 hour before serving.
Store in the fridge for up to 10 days or freeze for 2 months.
Optional - Toast pistachios for a deeper flavour.
