No-Bake Pistachio Chocolate Bars

These easy no-bake pistachio chocolate bars are made with pistachios, dates, coconut, peanut butter, cocoa powder, and dark chocolate. Gluten-free, dairy-free, and naturally sweetened.

  • Blend pistachios, dates, and coconut in a food processor.
  • Transfer the mixture to a bowl and add the peanut butter, cocoa powder, and water. Mix well.
  • Divide into 12 portions. Press into parchment-lined molds.
  • Melt chocolate with coconut oil over a double boiler.
  • Pour over bars, top with extra chopped pistachios.
  • Chill for 1 hour before serving. Enjoy!

Notes

Store in the fridge for up to 10 days, or freeze for up to 2 months.
Optional - Toast pistachios for a deeper flavor.
