Slice open each Medjool date and gently flatten into a heart shape.
In a food processor, blend raspberries, coconut, and chia seeds until thick and mouldable.
Roll small portions into balls and place onto each date heart.
Shape gently and chill for 1–2 hours.
Melt dark chocolate using a double boiler or microwave.
Dip each heart halfway or fully into chocolate.
Place on a cooling rack and decorate if desired.
Refrigerate until fully set.
For best results, use soft, fresh Medjool dates. If your dates feel dry, soak them in warm water for 5 minutes and pat dry before shaping.
Make sure the hearts are well chilled before dipping in chocolate. This helps the coating set quickly and gives a smooth, glossy finish.
