  • Slice open each Medjool date and gently flatten into a heart shape.
  • In a food processor, blend raspberries, coconut, and chia seeds until thick and mouldable.
  • Roll small portions into balls and place onto each date heart.
  • Shape gently and chill for 1–2 hours.
  • Melt dark chocolate using a double boiler or microwave.
  • Dip each heart halfway or fully into chocolate.
  • Place on a cooling rack and decorate if desired.
  • Refrigerate until fully set.

Notes

  • For best results, use soft, fresh Medjool dates. If your dates feel dry, soak them in warm water for 5 minutes and pat dry before shaping.
  • Make sure the hearts are well chilled before dipping in chocolate. This helps the coating set quickly and gives a smooth, glossy finish.
  • Melt the chocolate gently over low heat or in short microwave bursts to avoid burning and dull texture.
  • If the filling feels too soft, add 1–2 extra teaspoons of chia seeds and chill for 20 minutes before shaping.
  • For a firmer center, freeze the shaped hearts for 15–20 minutes before coating.
  • Use high-quality dark chocolate (70%+ cocoa) for better flavor and lower sugar content.
  • To keep the recipe fully vegan, check that your chocolate is dairy-free and not processed with milk solids.
  • If working in a warm kitchen, keep the hearts in the fridge between steps to prevent melting.
